Macaroni Mondays is exactly what it sounds like: macaroni on Mondays!
Macaroni & cheese was my favorite food growing up in Mid-western America. When I went vegan, I made every recipe available to try and replicate Mom’s. It took me a good 10 years to perfect, and now my mom requests it when I visit! It’s not made with any artificial vegan cheeses and is creamy and comforting.
The idea behind Macaroni Mondays is a cheap night out to get your week started a little bit better. No dinner party formalness, just relaxed eating and chatting. Hopefully, this will be a precursor to a vegan mac & cheeze stall/events and a trail for different toppings (Let me know if you are interested in a gluten-free night as well).
The night goes like this: bring your drinks and have some nibbles before having a big bowl of amazing mac & cheeze with a variety of toppings to try (seitan bacon, sauerkraut, crispy leeks, ranch dressing, etc), followed by a little dessert to complete the night.
It’s been happening since May 2014 and is always popular!
